Leftover Use-Up: Stuffed Mushrooms

So, you bought and ate a tonne of food over Christmas and you've been eating cold meats and cheese for days. By now you may have had enough...but there's still the odd lump of Stilton and some shreds of the Christmas ham leftover.
In steps...the stuffed mushroom.



These bad boys are sooooo simple to make and can be used with any leftovers! I sliced up some ham and stuffed it in the top of a big fresh portobello mushroom, then I crumbled left over Stilton, Gorgonzola, Smoked Applewood and Saint Agur cheese on top and shoved them under the grill for about 20 minutes or so, checking to make sure nothing burns!




Serve on a bed of rocket and enjoy as a delicious light lunch, or with steak for a hearty main meal.
