A Traditional Christmas...errr, Cheesecake

I'm just going to put it out there: we hate traditional Christmas pudding and Christmas cake in our house. Yep, I said it, in my opinion fruit is for eating fresh and juicy, not dried in a thick brandy-soaked hunk-o-stodge.
Instead, every year my sister and I make a different kind of dessert for Christmas day. This year it was this super creamy, really rather sickly white chocolate malteaser cheesecake.





To make yours you will need:

300g cream cheese
250g mascarpone
300ml double cream
300g white chocolate
500g biscuits (we used digestives and oreos)
Butter
Malteasers


First crush the biscuits using a rolling pin - we wrapped them in a plastic bag first to avoid mess. We also went on the basis of one biscuit for the cheesecake, one for us...



Then heat the butter in a pan and combine with the biscuits until you get a nice thick consistency, but not soggy.



Pour the base into a cake tin - you MUST use a cake tin with a removable base for a cheesecake otherwise you'll never get it out. Find one here.


Compress the base down with a rolling pin until solid. Then leave in the fridge to set.



Whisk the cheese, mascarpone and cream in a bowl while melting the white chocolate over a pan of boiling water. Then add the chocolate to the cream slowly, whisking the whole time to avoid curdling.


Crush malteasers and add them to the mixture...



Pour the mixture over the set base and leave in the fridge until solid.


Decorate and serve chilled, a perfectly creamy, sweet and satisfying treat!
