A Sunny Saturday

This weekend was gloriously sunny is good ol' Norfolk so Ian and I decided to get out and get some exercise...followed by some good ol' country pub grub!

This involved some classic rope-swing action...



And then a sunny pub garden...


We shared a burger and a revelation entitled 'bang bang' chicken salad which is basically chicken satay chicken and salad and was delicious!



In the evening we decided to make a Mediterranean-inspired tapas feast including:

mini rosemary roast potatoes
rocket, tomato and feta salad
prawns & chorizo
chilli prawns
garlic mushrooms
and peppers stuffed with couscous 


mini rosemary roast potatoes: dice the potatoes into 1cm squares and boil in salted water for 15 minutes, heat oil and rosemary in a roasting tin in the oven, when the oil is hot add the potatoes and roast in the oven until brown and crispy


rocket, tomato & feta salad: chop tomato and feta and add to washed rocket leaves


prawns & chorizo: pan-fry pre cooked prawns and sliced chorizo for approx 10 minutes or until the chorizo juices are flowing


chilli prawns: chop red chilli and add to pre-cooked prawns, then heat through in a pan
garlic mushrooms: slice mushrooms and pan fry in oil & garlic


peppers stuffed with couscous: fry mushrooms and courgette in a pan, cover couscous with boiling water and leave to absorb, then add mushrooms and courgette and tinned tomatoes, fill the half-peppers with the couscous and top with feta, leave under the grill for 5 minutes, or until peppers are soft and slightly blackening
